3 Day Refresh – Coconut Steamed Veggies

*I saved my fruit from the day to add to tonight’s dinner (pineapple). And I added more carrot to replace the cauliflower the recipe called for. This was by far MY favorite recipe of the three days, glad I saved the fruit to add. Tasty!

Coconut Steamed Veggies

(Serves 2)

1 cup water

1 cup fresh broccoli or green beans

1 cup fresh carrot, sliced

1 cup fresh cauliflower

1 tsp coconut oil (or extra-virgin coconut oil if coconut oil is unavailable)

1/2 tsp sea salt

 

Add water to saucepan; bring to a boil. Add broccoli, carrots, and cauliflower to saucepan; cover and cook 4 to 5 minutes or until tender-crisp. To Serve, place vegetables in a serving bowl. Add coconut oil and sea salt; toss gently to coat.
